QUAD CHOCOLATE BROWNIES

Here’s a super easy dessert that was a huge favorite of Momma and Tim. Cut the pieces small as it is very rich.

******* Quad Chocolate Brownies****

1 box chocolate brownie mix
1 cup semi sweet chocolate chips
1/2 jar hot fudge sauce
1/4 cup water
1/4 cup cooking oil
1 egg

1 container chocolate frosting

In large bowl beat water, oil, and egg until well mixed. Stir in brownie mix and hot fudge sauce, add chocolate chips and stir to combine.

Pour mixture into a greased 8×8 or 9×9 pan. Bake at 325 for 40-45 minutes.

Let cool completely before frosting. Serve very small pieces, it’s extremely rich.

Monday Washday Blues

Back from the laundromat. This time I used the one across from Pine Crest apartments. It was relatively clean, good AC, places to sit, machines were in good order.

On the minus side no restroom, no attendants, no water fountain, no soda machine. I was forced to use the restroom at DP Mart next door. That bathroom was Hell’s waiting room complete with peep holes.

FIRST DATE

This is from Thursday, April 20.   My husband died on March 3,  2015.  This is about the first date I have accepted since my husband died.

 

Well I’m back home. Randy told several people that it was our first date, so that cleared things up in my mind, not just hanging out as friends.

We’re going to Pinson tomorrow night for revival. I like the idea of a council of churches taking turns hosting different nights. First Baptist (where I grew up) revival week was just at First Baptist every night.

I had a new experience tonight at church, fun! Adult church for me has always been anxiety-inducing. Stay perfectly still until told to stand or sit, don’t open your mouth except to sing. Tonight was freeing, I felt no anxiety at all. Tonight’s service was at a church in Gate City and everyone was so loving, kind, and welcoming.

Randy was a perfect gentleman, he put his arm around me a couple of times and made sure to introduce me to everyone he knew. A gentle kiss goodnight was the perfect ending to a perfect first date.

Gratitude

For those who don’t know me, I am a 52 year old, disabled widow. I have yet to be approved for disability. I’m very poor, I keep the internet as a necessity, it is how I do online applications for help, how I research prices, and how I get a lot of coupons. (when my printer cooperates) The internet is also my entire social life and entertainment.

 

Having to ask others for help is so embarrassing, but God has Blessed me through others so often. I have no children or grandchildren (duh) so the gifts I receive from others have really kept me going.

 

It’s funny how going without something really makes you appreciate it when you have it again.

I went 19 months without TV, having one now still feels like a brand new novelty. Heck I even watch the commercials .

My yard had been overgrown and disgraceful. Now I love taking my morning walks around it everyday. The critters and I do several laps and have the best time!

For a good while before Leeds Outreach and food stamps, after Tim and Momma died, I pretty much lived on Ramen noodles, rice, and dried beans. Now I get to feast on fresh vegetables, fruits, fish, and other healthy foods.

 

GOOD FRIDAY

Today is Good Friday, a day for reflection and for myself, mixed emotions.  Without Good Friday we would not celebrate Easter, when Jesus Christ arose from the grave. But, sadly he was tortured, vilified, and crucified on Good Friday.

Good Friday was also the traditional day for Ninny and Poppa to plant their gardens, it was thought to be an extremely lucky day for planting.  Unfortunately my back and knees prevent me from gardening.  However I do have a beautiful purple Gloxinia that I have pampered since last year that is almost ready to bloom.

Look for cartons of Publix large eggs that has the coupon on top. If you buy 2 Sargento Shredded Cheese (any variety) you will save $1 on a dozen Publix large eggs. The eggs are on sale for $1.19, by using coupon a dozen is only 19 cents!

I only buy chocolates and sweets at Easter and Christmas.Luckily my all-time favorite chocolate was on sale BOGOF, I bought 6 bags of Dove Promises, 2 each of milk chocolate, caramel, and peanut butter. I will carefully ration them to stick with my Weight Watchers points, and to make them last until close to Christmas. I bought some cake mix and frosting too, sometimes I just need a cupcake,

COULDN’T BE EASIER

Just put a chuck roast in the crock pot. I’m going to share the most ridiculously easy way to cook roast beef. This is a very basic recipe from when I was very young, Probably one of the first things I learned to cook all by myself that wasn’t breakfast, (I was around 8-9 years old when I first made it) We had no crock pot back then, so I would bake it. This is not a pot roast, no vegetables, just delicious roast beef.
Serve with English peas, mashed potatoes and biscuits.

1 chuck roast 2-4 pounds
Worcestershire Sauce ( Lea&Perrins)
Soy Sauce ( Lee Kum Kee)
Garlic Powder
Black Pepper
Salt, very tiny amount

If baking in oven place roast on a double thickness of heavy foil in a pan. It will need to be wrapped tightly after seasoning.

Or place roast in crock pot.

Use equal amounts of both sauces and apply liberally. Lots of garlic powder and black pepper on both sides, very tiny amount of salt. The soy sauce has a lot of salt, so don’t add too much salt.

NOTE: Cooking times will vary depending on weight of the roast

For oven : wrap roast tightly in a double thickness of heavy foil. Bake at 300 for 3-4 hours, meat should be falling apart tender.

For crock pot : cook on high 3 hours, reduce heat to low for 2 hours, or until meat falls apart when tested with fork.
